You can’t. It’s called knitting when you use 2 needles.
I think that you are seeing the rope. There is only a crochet hook there and a rope she is working around.
Knitting needles? You might need to look again. There is no reference to knitting only crochet
It’s called a Tunisian crochet hook. It’s extra long crochet hook and uses special stitches.

The crochet technique using two needles is the Tunisian stitch. Though, I’m not sure that’s what we’re seeing here. I will have to read further.
