Braided Bread Dough Basket

bread-basket

To make this bread basket first you will knead bread dough. In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter and combine. Knead by hand until smooth and elastic, about 10 minutes.
Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make a round ball and allow to rise for 10 minutes longer.
Now take the ball and roll out with a rolling pin until you get a large square 11 x 11 inch and 1/8 thick.
Cut the dough into strips — 1/2 inch width.
Weave your lattice design on a piece of oiled parchment paper.
Lightly grease the top of the 7 inch diameter metal bowl (use butter or cooking spray). Now transfer the paper with the latticed dough into the metal bowl. Trim any excess dough.

Place the remaining 1/2 inch width long strips around the edge (rim) of the dough basket.
Now place bowl on a greased baking tray and allow to rise for 35 minutes. Brush the remaining beaten egg over the basket.
Bake at 200C for 20 minutes. Check after 15 minutes — if basket is browning too quickly cover with foil.
When basket is completely golden brown remove from oven. After cooled, remove bread basket from the bowl.

I thought the same thing, and wondered if frozen bread dough would work? Or refrigerated breadsticks. Maybe ask Pillsbury doughboy? lol

Instructions are a little sketchy. Does one center the parchment paper over the bowl? Wouldn’t it be easier to drape and crisscross the strips over the bowl and weave them on it? There are no directions for the handle, are they two longer strips just twisted or triple baid added on!?
Sorry to be so picky but I wrote very specific lesson plans for 27’years and always look for the details!

Sherry – I was thinking the same thing! I would think it would be easier to place all the dough on the bowl and weave your basket from there. As far as the handle goes, it looks like it is a simple 3-strand braid. Maybe place that over a bowl to bake as well. =)

Actually, I think it’s done on a flat surface because the strips are only 11″ long (not long enough to drape over the entire bowl). They all begin from the center and go out – think star burst. It sounds like they do it on a flat surface so they won’t slide off the side of the bowl. Then they use a cup to press the center of the “star burst” together and create a flat surface.

I also saw the disconnect between the instructions and photos. It reminded me of an episode of Everybody Loves Raymond, where the Italian great cook mother in law was sharing family recipes with daughter in law and intentionally sabotaged the daughter in law’s efforts. That’s been my go to reason for decades as to why my stuff never looks the same as cookbooks, lol.
I also thought you would have to weave the basket over the bowl, laws of physics and all that. Otherwise it could rip near the top of the basket, or stretch too thin and have gaping holes. Still want to try it! !

This basket is so pretty and would make a great gift. Check out Steve’s no Knead artisan breads on You Tube. He has a genius method for making bread that is virtually no hassle. I have avoided making bread again until I saw his videos. He makes it so easy. Here is a plain white bread, but he shows how to make olive bread, baguettes and many other kinds of bread.
