Pink Lemon Cupcakes Recipe


This next cupcake recipe will remind you of summer as it has a really refreshing flavor: lemon. If you don’t like your cupcakes with much cream, then just follow this recipe as it is a cupcake with two layers and it is much lighter, then a regular one. The outcome will look great and you won’t have to worry about the frosting melting on the sides of the cupcake. The ingredients you will need to make the cupcake are:

  • one and a half sticks of unsalted butter (softened);
  • one cup of sugar;
  • three eggs;
  • half a teaspoon of baking powder;
  • half a teaspoon of baking soda;
  • a pinch of salt;
  • one cup of milk;
  • two tablespoons of lemon zest;
  • two tablespoons of fresh lemon juice;
  • powdered sugar;

For the pink lemon frosting prepare:

  • four cups of sugar (powdered);
  • half a cup of unsalted butter (softened);
  • two tablespoons of fresh lemon juice;
  • one teaspoon of lemon zest;
  • two tablespoons of milk gel dye (pink);
